When we say gelato, we mean artisanal gelato, made with fresh, simple ingredients and without colourants or thickeners (read more here about how to recognise authentic artisanal gelato versus industrial products!).However, while coeliacs can enjoy gelato, those with heightened sensitivity should keep these three factors in mind when checking if a gelato contains gluten: Ingredients list: Some gelato may contain trace amounts of gluten, clearly indicated on the ingredient list or disclosed by your trusted gelatiere. Complex flavours: Certain flavours contain add-ins like biscuit crumble or wafers, which do contain gluten—making the flavour unsuitable for coeliacs. Cross-contamination risks: Gelaterias often serve cones, wafers and brioches, almost always made with wheat flour, so there is a possibility of contamination. Gluten-Free Gelato Flavours The good news?
